Avalon Distillery Company

Avalon Distillery Company began life in Sherborne, when its founder - Carl decided to move back home from London to his hometown in Dorset. As part of this new beginning back in Dorset, Carl decided to use his skills from working as a chef for many years and from studying science and a Nutrition MSc to produce an artisan gins.

Our distillery has now moved to the beautiful Dorset village of Cerne Abbas. A friendly village with beautiful Dorset countryside which inspires us to create and work on new and unique recipes for our products.

Our company name Avalon, the mystical and magical land from Arthurian legend, only to be discovered by the chosen few is also referred to as an ‘Isle of Apples’. This encouraged us to use crab apples in our London dry gin and name one of our stills Guinevere. However, whilst preparing our allotment in Sherborne we came across a rare site – an Adder (Vipera Berus) basking in the sun. Recognising that the Viper is entwined with the story of King Arthur and Avalon, Viper Gin was born!

Viper Gin is handcrafted in small batches in a copper pot still using English wheat spirit and ten carefully selected botanicals, notes of crab apple, citrus and juniper are balanced to create exceptionally smooth, fresh and memorable gin! While it makes a great cocktail base, it's every bit as good in a G&T – and there’s no sting in the tail.

Viper gin is available in pubs, restaurants, cafes, farm shops, delis. We also exhibit our products at events & food festivals across Dorset and the UK. We are always happy to organise a gin tasting evenings or bring our mobile bars to music festivals where you can enjoy Viper G&T's while meeting with your friends.

Within our first year Viper London dry Gin received a One Star Award from The Guild of Fine Food. This acknowledgement and constructive feedback gave us a good start and motivated us to improve even further. We are making sure that as we grow we improve and work towards perfection. As a result, we have carefully refined our gin and improved the flavour. Look out for our improved version future in January 2020.

We recommend Viper Gin with a slice or two of Granny Smith apple, a segment of star anise and elderflower tonic.

Viper London Dry Gin Cocktails:


Viper Gin 25ml
Elderflower liqueur 10ml
Freshly squeezed lemon juice 5ml
Salt water 1 drop
Cold prosecco to top up

Shake the first four ingredients together and strain into a flute glass. Add the prosecco and garnish with a sprig of lavender.

Old Testament

25ml Viper Gin
25ml Campari
25ml Ice Cider
one dash celery bitters

Stir down and fine strain into a Coupette. Garnish with cinnamon

This one is strong and bitter- a negroni riff
