The only growers of wasabi in the UK, The Wasabi Company offer fresh wasabi grown on their Dorset farm and an original range of their very own condiments and sauces. Inspired by top chefs using their wasabi in many wonderful ways they created their own range of condiments and sauces.

Leading the pack are the only mayonnaise and mustard in the world made with freshly grated wasabi. Awarded 13 Great Taste Gold Stars, including two winners of the coveted 3 Gold Stars, this range has exploded onto the scene and is bang on trend with bold umami and original citrus flavours.

The full range is: English Wasabi mayonnaise, English Wasabi mustard, English Wasabi powder, Wasabi Vodka, Yuzu mayonnaise, Yuzu mustard, Yuzu jam, Organic soy sauce, Yuzu soy sauce, Sudachi Kombu Vegan Ponzu and a sweet and sour rice vinegar – Sanbaizu. Using all-natural, authentic ingredients these products offer fresh flavours, perfectly balanced.

A family business happily growing watercress they took the decision to diversify in a radical way when they discovered wasabi had never before been grown in Europe. Specially adapted Victorian watercress beds run with mineral rich spring water where the wasabi thrives, until hand harvested and finely grated to deliver the rich, floral and pungent flavour of real wasabi.

Wasabia japonica is a perennial brassica native to Japan. Its natural habitat is the banks of mountain streams with abundant spring water loaded with nutrients and minerals. They re-create these wild wasabi conditions in watercress beds using ancient Japanese techniques. All parts of the wasabi plants are edible. Fresh rhizomes are harvested all year round; leaves & stems and flowers are seasonal.

The prized rhizomes take at least 18 months to reach harvest. Fine grating breaks down the wasabi at a cellular level instigating an enzyme reaction that delivers an aromatic, fresh flavoured pungency with a natural sweetness. Versatile in the extreme fresh wasabi can flavour dressings, butters, sauces, ceviches, gradvalax, sorbets, foams and freshly grated will accompany meat or fish.
