Just because we can’t gather in large groups to watch fireworks this year doesn’t mean we can’t recreate the atmosphere at home. Here’s some bonfire toffee that you can easily make yourself and enjoy with the family.
Ingredients
450g dark brown sugar
125ml hot water
¼ tsp cream of tartar
115g black treacle
115g golden syrup
A little oil for greasing.
Method
Start off by lining a baking tin with baking parchment and grease it.
Next, put the sugar and hot water in a large pan and heat gently until the sugar is dissolved. Don’t stir, but tilt the pan if you need to move it around.
Weigh out the rest of the ingredients and once the sugar is dissolved, add the rest. If you have a sugar thermometer, pop it in at this point. Bring it to the boil and keep boiling until you reach soft crack on your thermometer, around 140 degrees. This could take up to half an hour, but do not leave the pan unattended. As soon as it reaches the right temperature, tip it onto the tin and leave it.
Once cool, remove from the tin and break up using a rolling pin. You can then enjoy it as the sun starts to go down for a real autumnal treat!
