As World Apple Day is taking place on 21st October and we all know how much Dorset apples are loved around the UK, we thought we’d put together a series of recipes all featuring the humble apple.

It might be a bit early for thinking about Christmas, but in case it has crossed your mind, this is a wonderfully festive twist on braised cabbage, perfect for your Christmas lunch!
Ingredients:
1.5 kg red cabbage
2 red onions
4 apples
1 orange
2 tsp juniper berries
1 tbsp brown sugar
60ml cider vinegar
250ml cloudy apple juice
25g butter
You can find locally grown cabbages, onions and apples at farmshops and local stores across Dorset. Pick up some locally made apple juice and cider vinegar by visiting one of these producers and make sure to grab some local butter from one of our local farmers.
Method:
Start off by preparing the veg. You will need to quarter the cabbage and remove the core. Slice the onions and peel, core and chop the apples. You can also crush the berries and zest your orange.
Now the cabbage is in smaller chunks, thinly slice it and put it in a large saucepan. Stick the rest of your ingredients in the saucepan and bring it to the boil, stirring regularly.
Cover and cook on a low heat for around an hour until the cabbage is tender and the liquid has been absorbed. Continue to stir occasionally.
One of the great things about this recipe is that it can be made ahead of time and chilled or frozen ready for whenever you need it. Just reheat in the microwave!
