Use up that left over pumpkin after Halloween with these easy scones that taste like autumn!
Ingredients:
150g self raising flour
2 tbsp vanilla yoghurt
4 tbsp flavoured sparkling water or lemonade
1 heaped tbsp pumpkin puree
1tbsp sweetener or sugar
1 tsp cinnamon
If you’d like, you can add optional dried fruit or nuts into the mixture too!

Method:
Start by preheating the oven to 180 degrees or gas mark four.
While the oven is warming up, prepare the pumpkin, you could use shop-bought pumpkin puree or if you have pumpkin leftover from your carvings, you can just peel and chop the flesh and boil it until it starts to turn to mush.
Measure out all your ingredients and add them to the pumpkin and stir with a spoon until they combine into a dough.
Pour the dough out onto a floured surface and separate into four sections. Roll each section into a ball and flatten the top slightly. Place them all on a greaseproof baking tray and put them into the oven for around 12 minutes.
