Fed up of the amount of food you always have left over after cooking a meal? Here are a few ways you can make your food go further and reduce the amount that you waste.
Peppers
Whether you buy the one pepper or a pack with a variety of peppers, chances are, you never use the whole thing. If you find yourself with leftovers why not make a pesto?
Whatever slices you have left over, roast them and then blitz with parmesan, tomatoes and herbs, you can then store in a jar or airtight container and you have an instant pesto for pasta, spreading over salmon or something to toss over salad.
Lamb
As we’ve just had Easter, no doubt those of you who had lamb for dinner on Easter Sunday had a few bits left over. One way you can use up those remaining slices is to create lamb gyros. Simply fry up the slices in olive oil with some garlic, chilli and herbs until heated through and then serve in pitta breads with salad – perfect for an easy lunch or dinner the following day!
Sour cream
There’s nothing worse than getting sour cream for a meal and then having some left over – you know it won’t keep but also, do you really want it multiple times that week? Use the remaining cream to make a ranch dressing by mixing it with mayo, a bit of lemon juice and some garlic. This can then be drizzled over salads or used as a dip. Alternatively, you can whisk it up with double cream and condensed milk and make your own ice cream!
