Perfect for a mid-week meal, this Italian style cod dish combines loads of our favourite Dorset flavours!
- 2 cod fillets
- 1 (218g) package baby spinach leaves
- 2 tbsps cream cheese
- 1 tbsp pine nuts
- 1/2 onion chopped
- 3 mushrooms, sliced
- 100g grated Cheddar cheese
- 4 tbsps breadcrumbs
- 1 tbsp dried herbs
- 2 garlic cloves, chopped
- 2 tbsps grated Parmesan cheese
- 1 lemon, sliced
Preheat the oven to 180 degrees C.
Start by laying out the cod fillets, spread thin layer of cream cheese onto each one then top with a layer of pine nuts and chopped garlic, a layer of mushrooms, a layer of chopped onions, a layer of baby spinach and finally a layer of Cheddar cheese.
Put the cod fillets into the oven and bake for 15 minutes. Add another layer of cheese and bake for further 5 minutes. Top with a layer of crumb mix consisting of, 1 garlic clove, 1 tbsp dried herbs, breadcrumbs and Parmesan cheese.
Continue to bake until the top is browned, about 1 more minute, and serve immediately with salad or new potatoes.
