Welsh Cakes for St David’s Day done the Dorset way

If you make Welsh cakes in Dorset are they not technically Dorset cakes? This West Country take on a traditional Welsh recipe is perfect for anyone wanting to acknowledge St David’s Day.

Ingredients
110g butter
225g self raising flour
85g sugar
Handful of sultanas
1 free range egg
Milk if needed.

You can find the milk, butter and eggs here. We all know that Dorset makes some of the best milk and butter in the UK, so you can be sure these will be tasty!

Method

Cut the butter into cubes and rub it into the flour to make breadcrumbs, add the sugar and sultanas, then stir in the egg, mix together and form into a ball of dough. Add milk if needed to help with creating the dough.

Roll out the dough on a lightly floured surface and cut into rounds using a fluted cutter, or the rim of a glass if you don’t have a cutter.

These work best when cooked on a griddle, but you can easily make these with a frying pan if you don’t have one. Rub the pan with butter or use an oil if you prefer and put it on a direct heat and wait until it is warmed up.

Place the cakes on the griddle or pan and cook for 2-3 minutes on each side.

Remove the cakes from the pan and dust with sugar while still warm.

You can either eat these as they are, or mix it up and sandwich them together with jam, chocolate sauce or anything else you fancy! Why not get yourself some Dorset jam from here to go with them?
