As it is National Pie week, we’re bringing you seven pie recipes – one for every day of the week. This is the ultimate vegetarian pie full of colour and packed with flavour.
Ingredients:
1 tsp olive oil
1 garlic clove, chopped
400g chopped tomatoes
800g mixed beans
340g sweetcorn
1 tsp paprika
1 pinch chilli flakes|
1 lime
300g peas
150g feta or similar
375g ready rolled puffed pastry

Method:
Preheat the oven to 200 degrees or gas mark 6.
Fry the garlic in the oil for 1 minute in a medium pan and then pour in the tomatoes and bring to a simmer for 2 minutes. Add the beans, sweetcorn, spices and the lime zest.
Season to your taste and then cook for a further 2 minutes before adding the peas and cheese. Remove from the heat and set aside to cool.
Unwrap the pastry and cut to fit a pie dish. Lay the first sheet in the bottom of the pie dish and top with the bean mixture, then cover with the remaining sheet, sealing the edges together.
Place in the oven for 40 minutes until the pastry is golden and puffy.
