Chicken and tomato stew

With tomatoes in season, this is a great way to infuse some fresh spring flavours into your weekly menus without having to sacrifice on the filling, hearty meals we all crave after a long week at work.

Ingredients:

400g baby potatoes, halved
1 tbsp olive oil
4 chicken breasts
1 large red onion, thinly sliced
1 garlic clove, finely chopped
2 tbsp balsamic vinegar
50g capers, rinsed
300g tomatoes
10g fresh parsley, chopped

You can add a real Dorset twist to this recipe by using local producers to source your ingredients. Find chicken here and pick up your olive oil and other herbs from here. You can find locally grown potatoes and tomatoes all over the region.

Method:

Start by simmering your potatoes in a large saucepan until just tender, around 20 minutes and then drain.

While the potatoes are cooking, heat 1 tbsp oil in a casserole dish over a medium heat. Add the chicken and cook for 5 minutes each side until golden and cooked through. Transfer to a plate and season before covering to keep warm.

Reduce the heat and add 1 tsp oil and the onion to the dish. Fry for 3 minutes or until the onion has just softened, scraping any bits from the base of the dish. Add a splash of water if needed and then add the garlic and fry for one minute. Stir in the vinegar, capers and tomatoes. Cook for around 5-6 minutes until the tomatoes start to burst and stir occasionally.

Return the chicken and sprinkle with the parsley. Serve along with the potatoes.
