Fishing for flavour | in season seafood

As the warmer weather approaches, there is nothing better than enjoying a light, fish dish. In May, there are loads of amazing fish and seafood on offer from the region’s fishmongers, including cod, coley, crab, haddock, langoustines, plaice, prawns, salmon, sardines, sea trout, shrimp, whelks and whitebait. We’ve put together some suggestions of how you can enjoy the fresh taste of the sea here.

Whether you are a connoisseur or are preparing fish for the first time, the region’s fishmongers are here to help, just pop in and speak to one of the experienced staff and they will be more than happy to recommend the best cuts and how to prepare them. Cod

This classic is a versatile fish, you can batter it, fry it, roast it… the possibilities are endless. One way we love to prepare it at this time of year is by wrapping it in foil with lemon juice and herbs and roasting it. Serve with boiled potatoes, salad or rice for a lovely summery dish.

Haddock

A good option for a fish pie, there are loads of things you can do with haddock. Grab a pre prepared smoked haddock or smoke it at home and try it on toast with cheese for something a little different.

Prawns

King prawns make a great alternative to meat for the BBQ, especially if you’re in the mood for a kebab or two. Prawns soak up flavour easily, so why not cover them in honey and garlic before BBQing?
