If you’re looking for a simple, seasonal side dish look no further than this vegetarian option. Full of goodness and healthy without lacking in taste. Can be used as a side dish or a filling for wraps or jacket potatoes – whatever takes your fancy.
Ingredients:
2tbsp olive oil
2 large onions
1 clove garlic
8 oz cremini mushrooms
4 oz shiitake mushrooms
3 lb green beans
Salt and pepper to taste
Method:
Heat a covered saucepan of water to the boil.
While that’s boiling, heat oil in a skillet or frying pan on a medium heat. Add the onions and cook until brown and tender, stirring occasionally. Stir in the garlic and cook for a further five minutes.
Add the mushrooms and cook for five minutes or until tender, stirring occasionally, stir in salt and pepper to taste.
Add the green beans to the boiling water and cook uncovered until tender. Drain and rinse with cold water.
Just before serving, empty the saucepan, add the green beans and mushroom mixture, stirring to combine. Cook on medium until everything is heated through.
