This classic dessert is a must-have in the colder months and this version is super easy! This version is suitable for vegetarians and vegans as it uses vegetable suet which can be found in most stores. If you prefer you can use traditional beef suet – the measurements are the same! You could also amend this to be gluten free by substituting the flour.
Ingredients:
275g self raising flour
150g vegetable suet
35g caster sugar
175ml water
175g jam

Method:
Start by preheating your oven and preparing a loaf tin by lining it with parchment paper.
Place the flour, suet, sugar and a pinch of salt into a large bowl and add just enough water to bring it together into a light dough, knead the dough until it comes away from the sides of the bowl leaving them clean.
Place onto a well floured worktop and shape into a rectangle, roll it out until it is the same length as the tin and around three times the width. Spread jam over the dough, leaving a border at one end. Roll it tightly and seal with water on the border.
Put the roll into the tin with the seam facing down. Cover loosely with foil and place in the oven for 30-45 minutes until golden brown. You can test if its ready by pushing a skewer through the top and checking to see if it comes out clean.
