Rum and ginger punch

If you’re hosting a garden party or two this summer, make sure to have this punch on hand! You can even make a non alcoholic version for the kids by swapping out the rum for elderflower cordial.

Ingredients:
5 limes (you will need to juice 2, quarter 2 and thinly slice the remaining lime)
2tsp brown sugar
30g fresh mint
200ml Summer Cup or something similar
75ml spiced gold rum
1 lemon, sliced
¼ cucumber, sliced
800ml ginger beer
Ice

Method:

Start by preparing the limes. Put the quartered limes, sugar and half the mint into a jug, using the end of a rolling pin or a wooden spoon, muddle the ingredients until the mint is bruised and the limes squashed. Pour over the Summer Cup or alternative fruity drink, add in the rum and then chill in the fridge for at least an hour.

Just before you serve, remove the mint and the lime from the jug and then transfer the rest into a large punchbowl. Add the lime juice and the remaining ingredients and mix together. Slowly add the ginger ale and top up with ice.
