As leeks are in season, make sure to add them to your shopping lists and make this tasty and nutritious meal? Not only that, but these are much easier to make than you think!
Ingredients:
4 leeks
25g butter
100g full fat cream cheese
6 sheets filo pastry
2 skinless salmon fillets
Grab your salmon from one of our fishmongers here. You can find locally produced butter and cheese here and pick up some leeks from a farmshop.
Method:
Start by preheating your oven to 200 degrees or gas mark 6. Trim and finely chop the leeks and put them into a large saucepan with 3 tbsp water and a couple of knobs of butter. Cover with a tight fitting lid and cook for around 10 minutes until tender.
Remove the leeks from the pan and leave to the side to cool, mix with the cream cheese and season to your taste.
To make the pastry cases, brush a sheet of premade filo pastry with melted butter and then lay 2 more sheets on top, brushing a little butter between each layer. Place a salmon fillet in the centre, season and then spoon the leek mixture on top. Fold the ends over the top and pull up the sides. Scrunch together to seal. Repeat with the other sheets and salmon.
Once both pasties are built, brush them with melted butter and pop onto a baking tray. Cook for 25 minutes.
