Simnel cake

This is the ultimate Easter treat! With marzipan and fruit, Simnel Cake is a delightful sweet to eat after your Easter dinner! Don’t forget the decoration, it’s the most important part of a Simnel cake, the marzipan balls symbolise the apostles minus Judas!


225g sultanas
100g currants
50g mixed peel
Zest of two lemons
Juice of one lemon
50ml orange juice
225g butter
225g brown sugar
4 eggs
225g self raising flour
100g glace cherries
2 tsp mixed spice
500g marzipan
1 tbsp apricot jam


Put the sultanas, currants and peel in a bowl with the lemon juice and orange juice. Mix well, cover and leave to soak overnight.

Heat the oven to 150 degrees.

Line the base and sides of a round cake tin with baking paper or grease with butter.

Add the rest of the cake ingredients to the soaked fruit and stir well until combined. Put half the mixture into the cake tin and level off until as flat as possible.

Roll out around a third of the marzipan into a circle the same diameter as the cake tin. Place this on top of the cake mixture. Add the rest of the mixture, levelling the surface to be as flat as possible.

Bake for 2 and a half hours.

Once cooked, allow to cool for half an hour.

Warm the apricot jam in a saucepan, once melted, brush on top of the cake. Roll out half of the remaining marzipan and place it on top of the cake.

Roll the rest of the marzipan into 11 balls evenly on top of the cake in a circle, fix them in place with a dab of jam.
