If you have leftover turkey after your Christmas dinner, rather than those boring old turkey sandwiches, why not give this family favourite a go instead?
Ingredients:
3 tbs butter
5 tbs flour
400ml milk
2 tbs Dijon Mustard
100g Stilton cheese
8 slices of bread
cranberry sauce
100g cheese
400g sliced cooked turkey
salt and black pepper to taste
You can get your cheese from a local producer, try one of these, your bread from one of these bakers and your turkey from here.
Method:
Start by preheating your oven to 220 degrees or gas mark 7.
While the oven is heating, line a baking tray with foil and drizzle with oil or spray with a nonstick cooking spray.
In a saucepan, melt the butter and whisk in the flour cooking for a few minutes. Slowly whisk in the milk and cook until the mixture begins to thicken, stirring constantly. Add the mustard and stilton. Whisk to melt the cheese and then remove the mixture from the heat.
Prepare the bread by spreading cranberry sauce and then half the Stilton sauce. Place the slices onto a baking sheet and grate half of your cheese over the top. Place turkey on top of the cheese and spread the remaining stilton sauce over the other four slices of bread and put on top of the turkey. Grate any remaining cheese over the top.
Bake in the oven until the cheese begins to melt and the bread is golden brown.
