Breakfast Burrito from the Watercress Company

The Watercress Company are sprucing up the idea of brunch with a selection of recipes, including this one.
This recipe can be easily adapted to suit your preference or dietary requirements. For example, you can make this a vegan recipe by replacing the eggs and bacon for tomatoes and your favourite vegan sausages!

Prep time: 5 mins
Cook time: 10 mins
Serves 2

Ingredients

  • 2 tortilla wraps
  • 2 eggs
  • 1 avocado, sliced
  • 80g watercress, roughly chopped
  • 2 slices bacon

Method

  1. Cook the bacon in a frying pan. Meanwhile, scramble the eggs using your favourite technique.
  2. Layer the ingredients in each wrap – it’s easiest to lay the watercress down first, then the bacon, then the eggs and avocado – and fold the wrap so all ends are closed.
  3. In a dry frying pan, heat the closed wraps on all sides to seal, this should only take a couple of minutes but be careful not to burn the wraps.
