Frittatas are a great way to use up those ingredients you have hanging around in your fridge and this one combines some of the best Dorset ingredients with tasty salmon.
1tsp olive oil
2 spring onions
75g smoked salmon
2 large eggs

Start by heating your oil in a small frying pan. While it is warming up, slice the spring onions, chop the watercress and flake the salmon. Add all to the pan and stir fry for 1 minute.
In a small bowl or jug, beat the eggs and then pour into the pan.
Cook on a medium heat, stirring so that all the egg is cooked and almost set
Shake to level the surface and the put under a hot grill for 2 minutes until the top is set and a golden yellow colour. Serve hot with salad or boiled potatoes and enjoy!
